After several years spent in the kitchens of the finest Parisian luxury hotels and four years at the head of his own gastronomic restaurant in Paris’ 7th arrondissement, Jean-François Piège is now pleased to unveil the full extent of his talents in an eponymous book of original f ine cuisine recipes and creations.
The celebrated chef from the south of France has put together much more than a simple cookery book – this is an exquisi te and styl ishl y wri tten publication. Though Piège himself explains that he is “constantly moving, living every day in pursuit of the best way to express [his] art of eating”, this book is the culmination and embodiment of years of work and personal artistic growth.
Modelled on the menu the chef updates daily at his gastronomic restaurant, the book begins with a selection of hors-d’oeuvres. It then develops four main menus, cleverly named “Les Règles du Je(u)” or “Rules of my Game”. Each of them places the finest ingredients in the limelight throughout, from the appetizer through to the main dish and dessert. Each menu ends with recipes that reveal the makings of these culinary creations.
Two distinct, additional menus conclude the book: first, “Signatures”, which gives pride of place to Jean- François Piège’s timeless, best-known creations; while “Essentials” covers the chef’s fundamentals and kitchen essentials.
Through these 240 pages, 121 photographs and 85 creations, Jean-François Piège unveils more than 300 recipes and and presents a wealth of inventive flair in a book as fine as it is flavourful.
